Recipe of the week w/c Sunday 25th January 2015
Sloppy Joe Wraps – serves 4
- 1 onion
- 500g 5% extra lean mince – Quorn if you prefer
- 2 garlic cloves
- 2 tsp tomato puree
- 1 tsp of English mustard powder
- 1/2 beef stock cube
- 1 green pepper
- 1 tbs Worcestershire Sauce
- 4 wheat and gluten free seeded wraps (try Warburtons Newburn Bakehouse)
- Shredded crunchy lettuce and diced tomatoes to serve
- Heat a saute pan and mist with cooking spray. Add the onion and cook for 5 mins. Add the mince and garlic and cook for a further 5 minutes.
- When the meat is browned add the tomato puree, mustard and beef stock cube. Add 300 ml of boiling water, stir in the green pepper and simmer for 10 minutes. Stir in the Worcestershire Sauce.
- When ready to serve warm the wraps and fill with the Sloppy Joe Mixture and Salad
This menu is about 400 calories per person. Absolutely delicious and filling
